Last week I tweeted that I was looking for a salsa recipe for my fresh roasted green chilies and got quite a few responses. First, I have to mention that these green chilies are amazing smelling, which is why I wanted to come up with a custom roasted green chili recipe (I kept going into the fridge and opening the container to smell them).

 
So wanting to use these to make an amazing salsa, I looked through the recipes I got, then looked through my cabinets and here is what I came up with…
3 green chilies – 1 or 2 if your a wuss
1 can of fire-roasted tomatoes
1 yellow onion
3 cloves garlic
2 tbsp cilantro
1 tbsp white wine vinegar
1 tbsp olive oil
1 tbsp cumin
salt and pepper to taste
It’s easily adjustable depending on what you like, less chilies, more cumin, whatever. Chop up the onion and garlic and saute in the olive oil. Add the drained can of diced tomatoes, chopped up green chilies (skined & deseeded) and reduce. Let cool in a mesh strainer in the sink. Once cooled, toss into a food processor with the rest of the ingredients and take it for a few spins. That’s it!

Leftover tortillas = baked tortilla chips

I’m not sure why I haven’t thought to do this before, it’s so easy to make tortilla chips at home. If you’re anything like me you have tortillas on the counter or in the fridge all the time. Yesterday I noticed I had 2 cilantro-jalapeno tortillas, a couple regular and a few wheat tortillas hanging around. So I cut them up into little pizza-like slices, brushed olive oil on both sides and sprinkled salt on them. I stuck them on a cookie sheet in a pre-heated 400 degree oven for five minutes on each side and there you go, homemade tortilla chips!Â
